Bob’s Red Mill site, at http://www.bobsredmill.com/recipe/ , has a searchable database full of grain-based recipes. Here’s a likely looking candidate, let us know how it turns out
<b>Whole Wheat Crackers </b>
Ingredients:
2 cups Whole Wheat Flour
1/2 cup White Flour, Unbleached
1 cup Oats, Rolled, Quick Cooking
1/2 cup Water
1-1/2 tsp Sea Salt
2 Tb Brown Sugar, packed
2/3 cup Cold Water
6 Tb Vegetable Oil
In a small bowl put the quick oats and 1/2 cup of water. Allow to soak for 10 minutes, set aside.
Put into a blender the 2/3 cup cold water and vegetable oil; blend well for 1-1/2 minutes. Pour mixture into a bowl and add the flours, soaked oatmeal, salt, and brown sugar. Mix well, knead and let rest 10 minutes.
Divide dough in half. Roll out thinly on parchment paper or waxed paper, cut into squares. Put on lightly greased cookie sheet.
Bake at 350°F for 15 minutes, watch carefully to prevent burning.
