Scrambled Eggs with Smoked Salmon (from Nina Chambers)

8 local eggs, beaten
2-3 green onions, sliced thin
1/2 C smoked salmon broken up into chunks
2 T local butter or vegetable oil
Beat eggs. Saute sliced green onions in oil or butter for 1 min. Add eggs & scramble.
When eggs are creamy but not dry, add smoked salmon chunks & stir in. Turn down heat &
continue stirring till thoroughly heated. Serves 2-3.
Serve with toast from local bakery & home-made jam or preserves.
